Description

Brown Sugar Glazed Carrots are perfectly caramelized roasted carrots coated in a buttery brown sugar glaze with garlic and a hint of pepper, making them irresistibly sweet and savory. They make a perfect side dish to elevate any meal and are garnished with fresh parsley for added color and freshness.

Ingredients

Scale

Carrots

  • 2 pounds carrots peeled and sliced diagonally

Glaze

  • ¼ cup unsalted butter
  • ⅓ cup brown sugar
  • 2 teaspoons minced garlic
  • ¼ teaspoon pepper
  • ½ teaspoon salt

Garnish

  • fresh chopped parsley for garnish

Instructions

  1. Preheat and Prepare: Preheat the oven to 400 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray. Peel and slice the carrots diagonally, then place them in a large bowl.
  2. Make the Glaze: Melt the unsalted butter in a microwavable bowl. Add brown sugar, minced garlic, pepper, and salt then stir until fully combined into a smooth glaze.
  3. Coat Carrots: Pour the butter and brown sugar mixture over the sliced carrots and toss well to ensure all pieces are evenly coated with the glaze.
  4. Bake and Caramelize: Spread the glazed carrots out in an even layer on the prepared baking sheet. Bake for 15 minutes, then stir the carrots to redistribute the glaze. Return to the oven and bake for an additional 15 minutes until the carrots are tender and caramelized.
  5. Garnish and Serve: Remove the carrots from the oven and garnish with fresh chopped parsley before serving for a burst of color and fresh flavor.

Notes

  • Store leftover glazed carrots in an airtight container in the refrigerator for 3 to 5 days to maintain freshness.
  • Reheat leftovers gently in the microwave for 1 to 2 minutes or in a 350°F oven for about 5 minutes to restore warmth and texture.
  • Peel and slice carrots up to 3 days in advance and store them in an airtight container to save preparation time on the day of cooking.
  • For a variation, add a pinch of cinnamon or ginger to the glaze to enhance the warm flavors.
  • Use fresh parsley as a bright, fresh garnish, but chopped chives or thyme can also work well depending on preference.
