Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (176 C) and prepare a 9×13-inch or similar baking dish.
- Prepare Apples: Peel, core, and quarter the apples, then thinly slice them lengthwise with a paring knife, making sure slices are consistent for even cooking.
- Mix Ingredients: Place the apple slices in the baking dish and add lemon juice, coconut oil if using, coconut sugar, cinnamon, grated ginger, nutmeg, cornstarch, apple juice or water, and a pinch of sea salt. Toss everything gently to combine.
- Cover and Bake: Loosely cover the dish with foil and bake for 45 minutes.
- Uncover and Continue Baking: Remove the foil carefully and bake for an additional 15 minutes until the apples are fork-tender and slightly caramelized.
- Serve: Enjoy baked apples warm on their own or topped with coconut whipped cream or vanilla bean coconut ice cream.
- Store Leftovers: Refrigerate covered leftovers for 3-4 days or freeze up to 1 month. Reheat in the microwave or oven at 350 degrees F covered until warmed through, adding water if the sauce thickens too much.
