Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients
- 1 cup cottage cheese
- 2 tablespoons maple syrup
- ½ cup almond milk
- 1 large egg
- 2 tablespoons coconut oil, melted
Instructions
- Preheat Waffle Iron: First, preheat your waffle iron to medium heat to ensure it’s hot enough for cooking the batter evenly.
- Mix Dry Ingredients: In a large bowl, combine all of the dry ingredients (flour, baking powder, baking soda, and salt). Set this mixture aside.
- Blend Cottage Cheese and Milk: Add the cottage cheese and almond milk to a high-speed blender and blend until the mixture is smooth and creamy, eliminating lumps.
- Combine Wet Ingredients: Transfer the blended cottage cheese mixture to a large mixing bowl, then whisk in the egg and melted coconut oil until fully incorporated.
- Add Dry to Wet: Slowly add the dry ingredients into the wet ingredients, mixing gently until just combined, taking care not to overmix the batter.
- Cook Waffles: Spray both sides of the waffle iron with cooking spray. Scoop about ½ cup of batter onto the waffle iron, close it, and cook the waffles for 3 minutes or until golden brown and crispy.
- Serve: Carefully remove waffles and serve immediately with your favorite toppings such as fresh fruit, syrup, or nuts.
Notes
- To freeze: Allow waffles to cool completely, then place them in a gallon freezer bag. Freeze for up to 3 months for convenient, ready-to-toast snacks.
- To reheat in toaster: Toast frozen waffles until defrosted and golden brown for a crispy finish.
- To reheat in microwave: Heat waffles on high for 30 seconds, flip them, then heat for another 30 seconds. Repeat until waffles are warmed through.
- Use a non-stick spray or brush coconut oil on the waffle iron to prevent sticking and ensure easy removal.
- For extra flavor, consider adding vanilla extract or cinnamon to the wet ingredients.
