Ingredients
Scale
Salmon
- 4 salmon fillets (skin on, about 6 ounces each)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
Cowboy Butter Sauce
- 6 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 teaspoon Dijon mustard
- 2 teaspoons honey
- 1 tablespoon fresh lemon juice
- 2 tablespoons chicken broth low sodium
- ½ teaspoon red pepper flakes
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- 2 tablespoons fresh parsley (chopped)
- 1 lemon (sliced)
Instructions
- Season the Salmon: Pat the 4 salmon fillets dry and season both sides thoroughly with 1 teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon smoked paprika to prepare for cooking.
- Sear the Salmon: Heat 1 tablespoon olive oil in a large skillet over medium high heat. Place the salmon fillets skin side down and cook for 5 minutes until the skin is crispy and the fillets easily release from the pan, then flip and cook for another 3 minutes until just cooked through. Remove salmon to a plate and let rest.
- Prepare the Butter Sauce: Reduce heat to medium, melt 6 tablespoons unsalted butter in the same skillet. Add 4 cloves of minced garlic and cook for 30 seconds until fragrant, taking care not to burn the garlic.
- Add Sauce Ingredients: Stir in 1 teaspoon Dijon mustard, 2 teaspoons honey, 1 tablespoon fresh lemon juice, 2 tablespoons low sodium chicken broth, ½ teaspoon red pepper flakes, ½ teaspoon dried thyme, and ½ teaspoon paprika. Simmer the sauce gently for 2 minutes until it thickens slightly and becomes glossy.
- Warm Lemon Slices and Reheat Salmon: Add the lemon slices to the skillet to warm in the sauce. Return the salmon fillets to the skillet and spoon the cowboy butter sauce generously on top. Simmer gently for another 2 minutes to meld flavors and heat the salmon through.
- Finish and Serve: Sprinkle 2 tablespoons chopped fresh parsley over the salmon and serve immediately with extra cowboy butter sauce spooned over the top and on the side.
Notes
- Pat the salmon dry before cooking to ensure a crispy sear and avoid steaming.
- Start cooking salmon skin side down to crispen the skin and protect the flesh.
- Let the salmon naturally release from the pan to avoid tearing the fillet.
- Cook garlic only briefly to prevent burning and bitterness in the sauce.
- Keep the butter sauce at a gentle simmer for a glossy, emulsified texture.
- Do not overcook salmon; it should flake easily but remain moist inside.
- Use extra cowboy butter sauce to enhance rice, potatoes, or vegetables served alongside.
