Ingredients
Scale
Chicken
- 4 chicken breasts whole boneless skinless
- Salt and pepper to taste
- 1/4 cup all purpose flour
- 2 tablespoons butter
- 2 tablespoons olive oil
Sauce
- 1 cup chicken broth
- 2 lemons whole (for juice)
- 3/4 cup heavy cream
- 1/4 cup capers
Pasta and Garnish
- 1 pound angel hair pasta
- Parsley for garnish, chopped
Instructions
- Prepare the chicken: If the chicken breasts are thick, pound them to an even thickness for faster and more even cooking. Season both sides of the chicken breasts with salt and pepper.
- Dredge the chicken: Coat each chicken breast evenly in all-purpose flour, shaking off any excess.
- Cook the chicken: Heat butter and olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 3 minutes on each side, until cooked through and no longer pink inside. Remove the chicken from the skillet and set aside on a plate.
- Make the sauce: Reduce the heat to medium-low. Add the chicken broth, juice of the two lemons, heavy cream, and capers to the skillet. Bring the mixture to a boil, then reduce heat to medium-low to maintain a gentle simmer. Season with salt and pepper to taste. Let the sauce bubble and thicken for about 3 minutes.
- Cook the pasta: Meanwhile, cook the angel hair pasta according to package instructions until al dente. Drain well.
- Serve: Place the cooked pasta on plates or a serving dish. Top with the cooked chicken breasts, spoon the creamy lemon-caper sauce over the chicken and pasta, and garnish with freshly chopped parsley.
Notes
- Pounding the chicken breasts to an even thickness ensures they cook quickly and evenly.
- Use fresh lemon juice for the best bright and tangy flavor.
- The sauce should be simmered gently to avoid curdling the cream.
- Angel hair pasta is delicate and cooks quickly; watch carefully to avoid overcooking.
- Capers add a salty, briny flavor; rinse them lightly if you prefer a milder taste.
