Ingredients
Scale
Vegetables
- 2 medium carrots diced
- 1 small yellow onion diced
- 2 medium celery ribs diced
Main
- 5 pounds whole chicken
- 1/2 cup salted butter melted
- 1 teaspoon poultry seasoning
- 1 teaspoon paprika
- 6 ounces box stove top stuffing any flavor
Instructions
- Prepare the vegetables and chicken: Add the diced carrots, onion, and celery to the bottom of the slow cooker. Clean out the inside cavity of the whole chicken thoroughly and discard any giblets or loose pieces, then place the chicken on top of the vegetables.
- Season and butter the chicken: Pour the melted salted butter evenly over the whole chicken. Sprinkle poultry seasoning and paprika on top, then rub the seasonings and butter all over the chicken’s surface. Optionally add salt and pepper to taste.
- Cook in the slow cooker: Place the lid on the crockpot and cook the chicken on high heat for 6 hours to ensure the meat is tender and fully cooked.
- Remove and set aside chicken: Carefully remove the cooked chicken and place it on a platter. Cover with foil to keep warm. Remove all liquid from the slow cooker but reserve 1.5 cups of the liquid along with all the cooked vegetables remaining in the pot.
- Add stuffing to crockpot: Pour the entire box of stovetop stuffing into the slow cooker with the reserved liquid and vegetables. Stir well to combine, then cover and cook for an additional 10 minutes.
- Finish and serve: Fluff the stuffing mixture with a fork once cooked. Slice the chicken as desired and serve it alongside the stuffing. For presentation, you can also place the sliced chicken back in the slow cooker on top of the stuffing.
Notes
- For a different flavor profile, try using chicken broth instead of water when reserving liquid for the stuffing.
- If preferred, season the stuffing with additional herbs such as thyme or sage for extra flavor.
- Make sure to clean the chicken cavity well to avoid any off flavors during cooking.
- Leftover stuffing can be stored in an airtight container in the refrigerator for up to 3 days.
- If you want crispier skin on the chicken, you can broil it briefly after slow cooking.
