Ingredients
Scale
Beef and Seasonings
- 3 to 4 pounds boneless chuck roast – excess fat trimmed
- 1 teaspoon kosher salt per side (about 2 teaspoons total)
- ½ teaspoon ground black pepper per side (about 1 teaspoon total)
- Olive oil – a few generous drizzles for searing
Onion and Sauce
- 4 tablespoons unsalted butter
- 4 large yellow onions – thinly sliced
- 6 cloves fresh garlic, minced
- ¾ cup dry white wine – Sauvignon Blanc or Pinot Grigio
- 1 tablespoon all-purpose flour
- 3 cups beef broth – plus more as needed
- 2 tablespoons Worcestershire sauce – plus more to taste
- 3 bay leaves – fresh or dried
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
Topping and Serving
- 1 cup freshly shredded Gruyere cheese
- Sliced baguette – for serving
Instructions
- Preheat Oven: Preheat your oven to 300 degrees Fahrenheit to prepare for slow braising.
- Season the Beef: Pat dry the chuck roast and season both sides generously with kosher salt and ground black pepper.
- Sear the Roast: Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on each side for about 5 minutes until a golden brown crust forms. Remove the roast and set aside.
- Caramelize Onions: Reduce heat to medium. In the same pot, melt the butter and add the sliced onions. Cook, stirring occasionally, for 25 to 30 minutes until they turn a light brown color, adding a splash of broth as needed to deglaze the pot.
- Add Garlic and Wine: Add the minced garlic and cook for 2 minutes. Pour in the white wine to deglaze the pot and let it reduce by about half.
- Thicken the Sauce: Sprinkle 1 tablespoon of flour over the onions and stir to coat evenly.
- Add Broth and Herbs: Pour in the beef broth and Worcestershire sauce. Add bay leaves, rosemary, and thyme sprigs. Bring the mixture to a simmer and season with salt and pepper to taste.
- Braise the Roast: Return the seared chuck roast to the pot, ensuring the liquid covers about ¾ of the beef. Add more broth if necessary. Cover with lid and braise in the oven for 3 hours and 30 minutes until fall-apart tender. For extra tenderness, cook an additional 20 minutes.
- Increase Oven Temperature: Remove the pot from the oven and increase the temperature to 400 degrees Fahrenheit.
- Shred Beef and Remove Herbs: Shred the beef into smaller chunks in the pot. Discard excess fat, bay leaves, and herb bundles.
- Add Cheese and Melt: Sprinkle the shredded Gruyere cheese evenly over the beef. Return the pot to the oven for 5 to 7 minutes until the cheese is melted and bubbly.
- Serve: Serve the French Onion Pot Roast warm over mashed potatoes or alongside your favorite sides with toasted baguette slices.
Notes
- Use Chardonnay or Pinot Grigio for white wine to balance rich caramelized onions and avoid bitterness.
- Four large yellow onions may seem like a lot, but they reduce significantly during cooking.
- Caramelizing onions requires patience—cook until light brown as they will continue to caramelize in the oven.
- The braising liquid should cover about ¾ or more of the beef; add extra broth if necessary.
- Use freshly shredded Gruyere cheese for better melting.
- To reheat leftovers, microwave with additional cheese and a splash of broth to maintain moisture.
- Substitute sweet onions if yellow onions are not available for extra flavor.
- If no white wine is on hand, substitute beef broth with a splash of balsamic vinegar for acidity.
- If fresh rosemary or thyme aren’t available, use 1 teaspoon dried thyme (or Italian seasoning) plus ½ teaspoon dried rosemary.
- Gruyere cheese can be substituted with Swiss, Fontina, or Provolone cheeses.
