Description

Frozen Cottage Cheese Bark is a healthy and delicious frozen treat combining creamy cottage cheese, sweet honey, peanut butter, rich chocolate swirls, and crunchy granola. Perfect for a refreshing snack or dessert, this easy no-bake recipe requires minimal prep and freezes for satisfying indulgence.

Ingredients

Scale

Main Ingredients

  • 2 cups (16 oz) cottage cheese, whole milk
  • 2 Tablespoons honey
  • 2 Tablespoons peanut butter

Toppings

  • 3 Tablespoons chocolate chips, preferably Lily’s chocolate chips
  • 3 Tablespoons granola of choice

Instructions

  1. Blend ingredients. Place the cottage cheese, honey, and peanut butter in a blender or food processor and blend until smooth and creamy.
  2. Spread mixture. Line a rimmed baking sheet with parchment paper. Pour the blended mixture onto the sheet and spread evenly using a spatula or spoon into a rectangular shape about ¼ of an inch thick.
  3. Melt chocolate and swirl. Melt the chocolate chips gently in a microwave or double boiler. Drop teaspoon-sized dollops of melted chocolate onto the cottage cheese layer and use a knife to swirl the chocolate throughout the mixture.
  4. Add granola and freeze. Sprinkle granola evenly over the top of the bark. Place the baking sheet in the freezer and freeze for about 3 hours until the bark is firm.
  5. Cut and serve. Once firm, remove from the freezer and cut or break the bark into 16 to 20 pieces. Serve immediately or store leftovers in a sealed freezer bag or airtight container for up to 3 months.

Notes

  • Use whole milk cottage cheese for the best creamy texture; low-fat versions may result in a less smooth consistency.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • Swirling the chocolate while it is melted ensures a marbled effect and even flavor distribution.
  • Granola can be replaced with nuts or seeds based on personal preference.
  • Store the bark in the freezer and avoid thawing completely to maintain the texture.
