Description

A rich and flavorful Garlic Butter Steak with Parmesan Alfredo combines perfectly seared steak bites coated in garlic butter with creamy, cheesy fettuccini Alfredo. This hearty dish is perfect for a satisfying dinner featuring tender steak and indulgent homemade sauce.

Ingredients

Scale

Steak and Seasoning

  • 2 lbs steak filet, ribeye, sirloin, etc.
  • 2 tablespoons steak seasoning, divided (see notes for seasoning recipe)
  • 4–5 tablespoons avocado oil

Pasta

  • 1 lb dry fettuccini noodles

Sauce and Garnish

  • 6 tablespoons butter, divided
  • 10 cloves garlic, minced and divided
  • 1.5 cups heavy cream
  • 3/4 cup half and half
  • 1/2 teaspoon freshly cracked pepper
  • 2 green onions, diced (green and white parts)
  • 1 cup parmesan, freshly grated

Instructions

  1. Prepare Steak: Cut the steak into 2-3 inch pieces. Rub with avocado oil and season liberally with steak seasoning, reserving 2 teaspoons of the seasoning for the Alfredo sauce.
  2. Cook Steak: Heat a large skillet over medium-high heat and add 3 tablespoons avocado oil. Cook the steak pieces a few minutes per side, flipping just once, until your preferred doneness is reached. Then set the steak aside in a bowl.
  3. Create Garlic Butter: Reduce the heat to low. Add 2 tablespoons butter and 1 tablespoon minced garlic to the skillet. Cook for 1 minute or until fragrant.
  4. Toss Steak in Garlic Butter: Return the steak to the skillet and toss to coat in the garlic butter. Then transfer the steak back to a bowl and cover loosely with foil to keep warm.
  5. Cook Pasta: Bring a large pot of salted water to a boil and cook the fettuccini noodles according to package instructions until al dente. Drain and set aside.
  6. Make Alfredo Sauce: In the same skillet with leftover butter, add 4 tablespoons butter and the remaining minced garlic. Sauté until fragrant. Stir in heavy cream, half and half, and the reserved 2 teaspoons of steak seasoning. Simmer and reduce for 3-4 minutes.
  7. Add Cheese and Finish Sauce: Whisk in the freshly grated parmesan until the sauce is smooth and thickened. Remove from heat and stir in diced green onions. Taste and adjust seasoning as needed, adding salt only if necessary.
  8. Combine Pasta and Sauce: Toss the drained fettuccini noodles into the Alfredo sauce until evenly coated.
  9. Serve: Plate the coated pasta and top with the garlic butter steak bites. Garnish with extra green onions and parmesan as desired.

Notes

  • Do not add salt to the Alfredo sauce until after the parmesan is added, as the cheese contains sodium. It’s easier to adjust salt at the end than to correct oversalting.
  • Steak seasoning recipe: 2 tablespoons smoked paprika (regular paprika can be used), 1 tablespoon onion powder, 2 teaspoons cayenne powder, 2 teaspoons garlic powder, 1 teaspoon ground black pepper, 1 teaspoon kosher salt, 1/2 teaspoon dried thyme, 1/2 teaspoon dried oregano.
  • Steak doneness internal temperatures: Rare 120–125°F, Medium Rare 130–135°F, Medium 140–145°F, Medium Well 150–155°F, Well Done 160–165°F.
  • Avocado oil is preferred for its higher smoke point compared to olive oil, which helps achieve better searing.
