Description

A vibrant and creamy Green Goddess Chickpea Salad made with a dairy-free herbaceous dressing, perfect for a healthy snack, sandwich filling, or light lunch. This salad combines mashed chickpeas with fresh celery and a flavorful green goddess dressing blending fresh herbs and dairy-free yogurt for a refreshing taste.

Ingredients

Scale

Green Goddess Dressing

  • 1/2 cup dairy free yogurt
  • 1 cup fresh parsley
  • 1 cup other fresh herbs (cilantro and dill)
  • 1 green onion
  • 1/2 lemon, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1 dash sea salt and black pepper

For the Salad

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 stalks celery, chopped
  • 1 green onion, sliced (included in dressing but also added to salad)

Instructions

  1. Make the dressing: Add all of the salad dressing ingredients—dairy free yogurt, fresh parsley, cilantro, dill, green onion, lemon juice, olive oil, garlic powder, salt, and pepper—to a small blender. Puree until smooth to create the vibrant and herbaceous green goddess dressing.
  2. Prepare the chickpea salad: In a small mixing bowl, add the drained and rinsed chickpeas. Partially mash them with a fork or potato masher until chunky but slightly broken down. Add the chopped celery and sliced green onion.
  3. Combine salad and dressing: Pour the prepared green goddess dressing over the chickpea mixture. Mix well with a spoon until everything is evenly coated. Taste and adjust salt and pepper as needed.
  4. Serve: Enjoy the salad immediately with fresh cut vegetables or crackers, or use it as a filling for sandwiches or wraps. Refrigerate leftovers in an airtight container for up to 4 days.

Notes

  • This chickpea salad stores well for meal prep; keep it refrigerated in an airtight container for up to 4 days.
  • You can substitute dairy-free yogurt with regular yogurt if not dairy sensitive.
  • Add more fresh herbs or lemon juice for a zippier flavor.
  • For more texture, add chopped nuts or seeds.
  • Serve it chilled for best refreshing taste.
