Ingredients
Scale
Cornbread
- 1/2 cup 1 stick butter, melted
- 2/3 cup granulated sugar
- 2 Tbsp. honey
- 2 large eggs
- 1–1/4 cups buttermilk, shaken well
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
Honey Butter Drizzle
- 1/4 cup butter, melted
- 2 Tbsp. honey
Instructions
- Preheat oven and prepare baking dish. Preheat your oven to 350 degrees F. Lightly grease a square baking dish, approximately 8×8 inches, to prevent sticking.
- Mix wet ingredients. In a medium bowl, stir together melted butter, granulated sugar, and honey until combined. Whisk in the eggs one at a time, then whisk in the buttermilk thoroughly.
- Add dry ingredients and mix. Add the cornmeal, all-purpose flour, baking soda, and kosher salt to the wet mixture. Stir gently just until the flour disappears. Be careful not to over-mix to keep the cornbread tender.
- Bake the batter. Pour the batter into the prepared baking dish and bake for 50 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown.
- Prepare honey butter drizzle. While the cornbread bakes, combine the melted butter and honey in a small bowl, mixing well for the glaze.
- Drizzle and rest. When the cornbread is done, gently poke the top all over with a fork to create small holes. Pour the honey-butter mixture evenly over the top. This step will keep the cornbread moist and add extra sweetness. Let it sit for 5 minutes.
- Serve and enjoy. Slice the cornbread into 12 pieces and serve warm. Enjoy it as a side dish or a sweet snack.
Notes
- Optional add-ins: shredded cheddar cheese, fresh blueberries, minced jalapenos, fresh sweet corn kernels, chopped peaches, or chopped crispy bacon to customize flavor.
- Do not over-mix the batter; overworking can make the cornbread tough.
- Using buttermilk adds tanginess and helps achieve a tender crumb.
- Letting the honey butter drizzle soak in gives an extra moist texture and rich flavor.
- Serve warm for best taste and texture.
