Description
This Peanut Butter Cottage Cheese Pie is a delightful no-bake dessert combining a crunchy pretzel crust with a creamy peanut butter and cottage cheese filling, topped with chocolate chips for an irresistible treat that’s perfect for any occasion.
Ingredients
Scale
For the crust:
- 4 1/2 cups pretzels
- 3 tbsp sugar
- 12 tbsp butter, melted
For the filling:
- 3/4 cup heavy whipping cream
- 1/4 cup sugar
- 3/4 cup cottage cheese
- 3 tbsp peanut butter
- 1/2 cup chocolate chips
Instructions
- Make the crust: Add pretzels and sugar to your food processor and pulse until finely crushed. With the motor running, slowly pour in the melted butter and continue pulsing until the mixture is combined and can be pinched together with your fingers.
- Prepare the crust pan: Grease a 9-inch pie pan, transfer the crust mixture into it, and use your hands to press the mixture down evenly along the bottom and sides of the pan. Place the crust in the freezer to firm up while you prepare the filling.
- Whip the cream: In a large bowl, whip the heavy cream and sugar together until stiff peaks form, which should take about 5 minutes using a mixer.
- Add cottage cheese and peanut butter: Gently fold the cottage cheese and peanut butter into the whipped cream, whisking for about 1 minute until fully combined and smooth.
- Assemble the pie: Scoop the creamy filling into the chilled pretzel crust and smooth the top using the back of a spoon or a rubber spatula. Evenly sprinkle the chocolate chips on top, gently pressing them into the filling so they stick.
- Freeze to set: Place the assembled pie back into the freezer and allow it to set for 4 hours for the flavors to meld and filling to firm up.
- Serve: Remove the pie from the freezer 10 minutes before serving to soften slightly. Slice carefully and enjoy this creamy, crunchy dessert.
Notes
- Calories are per serving and are an estimation.
- If the texture of cottage cheese bothers you, blend the cottage cheese in a food processor until smooth before adding it to the filling.
- You can substitute pretzels with graham crackers for a different crust flavor.
- For a less sweet crust, reduce the sugar amount slightly or omit.
- Ensure stiff peaks form in the whipped cream for a light and fluffy filling texture.
