Ingredients
Scale
Main Ingredients
- 8 oz dried wide rice noodles
- 6 oz chicken (or beef, shrimp, tofu, pork)
- 1 ½ cups Chinese broccoli (gai lan), cut into bite-size pieces
- 2 large eggs
- 3 tablespoons avocado oil, divided
Pad See Ew Sauce
- 2 ½ tablespoons Thai sweet soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon oyster sauce
- 2 teaspoons dark soy sauce
- ⅛ teaspoon white pepper powder
- 3 cloves garlic, minced
- ½ teaspoon sugar (optional)
Instructions
- Make the Sauce: In a small bowl, combine Thai sweet soy sauce, fish sauce, oyster sauce, dark soy sauce, white pepper powder, minced garlic, and sugar if using. Stir well and set aside.
- Cook Noodles: Boil the dried rice noodles for just under the recommended cooking time by 1 to 2 minutes to keep them firm for stir frying. Rinse with cold water and drain thoroughly to prevent sticking.
- Stir Fry Protein: Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add chicken or your choice of protein and stir fry until almost cooked through.
- Scramble Eggs: Push the protein to one side of the pan, add the eggs to the empty side, and scramble them until just set.
- Add Vegetables and Noodles: Add Chinese broccoli, drained noodles, the prepared sauce, and the remaining 2 tablespoons of oil. Increase heat to high and stir fry quickly, coating the noodles evenly with sauce. Add a tablespoon of water if needed to loosen the sauce.
- Caramelize Noodles: For restaurant-style Pad See Ew, let the noodles sit without stirring for 15 to 30 seconds until they caramelize and develop a slight char on the bottom. Flip carefully to cook the other side similarly.
- Serve: Remove from heat and serve immediately for the best texture and flavor.
Notes
- Use Thai sweet soy sauce for authentic sweetness; brand sweetness may vary so adjust accordingly.
- Cook noodles just before stir frying to avoid soggy texture and breaking apart.
- Choose a mild fish sauce brand for balanced flavor.
- Oyster sauce adds a sweet, umami flavor without a strong oyster taste.
- Dark soy sauce provides the signature dark color to the dish.
- Store leftovers in an airtight container in the refrigerator for up to 3 or 4 days.
- For a vegetarian version, use about 2 cups mixed vegetables and substitute fish and oyster sauces with vegetarian versions or soy sauce.
