Description
A vibrant and creamy Red White and Blue Potato Salad featuring colorful baby potatoes, hard boiled eggs, and a zesty mayonnaise dressing, perfect for picnics, barbecues, and patriotic celebrations.
Ingredients
Scale
Potatoes
- 3 pounds baby red, blue and yellow potatoes
Dressing and Mix-ins
- 1½ cups mayonnaise
- 5 hard boiled eggs peeled and chopped
- 1 red bell pepper seeded and diced
- 1 tablespoon Dijon mustard
- 1½ teaspoons sea salt (divided)
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon paprika for garnish
Instructions
- Prepare Potatoes: Cut the baby red, blue, and yellow potatoes into bite-sized pieces without peeling to retain their colorful skins and texture.
- Cook Potatoes: Place the cut potatoes into a large pot filled with cold water. Bring the water to a boil, add 1 teaspoon of sea salt, then reduce the heat to medium and simmer the potatoes for 20 minutes or until they are just fork tender.
- Drain Potatoes: Once cooked, drain the potatoes thoroughly using a colander placed in the sink.
- Mix Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, remaining ½ teaspoon of sea salt, ground black pepper, and garlic powder. Stir until the mixture is creamy and well blended.
- Combine Ingredients: Add the warm potatoes, diced red bell pepper, and chopped hard boiled eggs into the bowl with the dressing. Mix gently until all ingredients are evenly coated with the creamy dressing.
- Garnish Salad: Sprinkle paprika evenly over the top of the salad for a pop of color and subtle smoky flavor.
- Chill: Cover the potato salad and refrigerate for at least 1 hour until ready to serve. This allows the flavors to meld together beautifully.
Notes
- Do not peel the potatoes to preserve the beautiful colors and added texture.
- For a lighter dressing, start with 1 cup of mayonnaise and add more as needed to reach your desired creaminess.
- Make sure to refrigerate the salad within 2 hours of preparation to keep it safe for consumption.
- Hard boiled eggs can be prepared ahead of time to streamline the process.
- Adjust seasoning to taste, adding more salt or pepper if desired after chilling.
