Description

This Spinach Feta Salmon in Phyllo is a delicious and elegant dish featuring tender salmon fillets wrapped in crispy, buttery phyllo dough with a creamy spinach and feta filling. Perfect for a savory main course, it combines Mediterranean flavors with flaky textures for a satisfying meal.

Ingredients

Scale

Salmon and Filling

  • 1 lb salmon skin removed
  • 3 oz fresh spinach
  • 1/3 cup crumbled feta
  • 1 shallot minced
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 oz cream cheese softened

Phyllo and Topping

  • 6 sheets phyllo dough
  • 4 oz butter melted
  • 1 tbsp sesame seeds

Instructions

  1. Preheat Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper to prepare for baking the salmon parcels.
  2. Sauté the Filling: In a skillet over medium heat, add a splash of oil and sauté the minced shallot for 2 to 3 minutes until softened. Add the fresh spinach and cook until wilted. Transfer the mixture to a bowl and let it cool slightly.
  3. Mix the Filling: To the cooled spinach mixture, add softened cream cheese, crumbled feta, oregano, salt, and black pepper. Stir well until the mixture is creamy and well combined.
  4. Prepare the Phyllo Dough: Lay one sheet of phyllo dough flat on a clean surface and lightly brush it with melted butter. Place another sheet on top and brush with butter again. Repeat until you have 3 layered sheets. Repeat these steps for the second salmon fillet.
  5. Assemble the Parcels: Place one salmon fillet in the center of each phyllo dough stack. Spread half of the spinach-feta filling on top of each fillet. Fold all sides of the phyllo over the salmon to form a parcel. Brush the tops and sides of each parcel with melted butter and sprinkle with sesame seeds.
  6. Bake: Place the salmon parcels on the prepared baking sheet and bake in the preheated oven for 20 minutes, or until the phyllo is golden brown and crispy.

Notes

  • Use fresh spinach for the best flavor and texture in the filling. You can substitute with frozen spinach that is thawed and well-drained if fresh is unavailable.
  • Make sure the cream cheese is softened before mixing to achieve a smooth filling.
  • Work quickly with phyllo dough to prevent it from drying out; cover unused sheets with a damp cloth.
  • You can substitute sesame seeds with poppy seeds or omit them if preferred.
  • Adjust seasoning of the filling to taste, especially if using salted feta cheese.
  • For easier handling, cut the phyllo sheets to fit salmon fillets if they are smaller or larger than average.
