Description

A hearty and flavorful breakfast baked potato loaded with sausage, scrambled egg, peppered gravy, cheese, and bacon, then baked to melty perfection and garnished with fresh chives.

Ingredients

Scale

Potato Base

  • 1 large baking potato (one per person, cooked)

Fillings

  • 1 tablespoon butter
  • 2 tablespoons sausage crumbles
  • 1 egg scrambled
  • 4 tablespoons Southeastern Mills Peppered Gravy Mix, prepared
  • 3 tablespoons shredded Cheddar cheese
  • 2 strips bacon, crumbled

Garnish

  • Chopped chives for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit to prepare for baking the assembled potato.
  2. Prepare Potato: Split open the cooked baked potato carefully to create a cavity for the fillings.
  3. Layer Ingredients: Inside each cavity, place one pat of butter, then 2 tablespoons of sausage crumbles, followed by 2 tablespoons of prepared peppered gravy. Next, add the scrambled egg, then another 2 tablespoons of peppered gravy, 3 tablespoons of shredded Cheddar cheese, and finally crumble 2 strips of cooked bacon on top. Season with salt and pepper to taste.
  4. Bake: Place the stuffed potato on a baking sheet and bake in the preheated oven for about 15 minutes, just long enough to heat through the ingredients and melt the cheese.
  5. Garnish and Serve: Remove from the oven and garnish with chopped chives. Serve hot with extra prepared peppered gravy on the side if desired.

Notes

  • Large potatoes are used here but ingredient amounts can be scaled down for smaller potatoes.
  • One large potato can be halved and shared between two people if preferred.
  • Ensure the potato is fully cooked before assembling the ingredients.
  • For extra flavor, you can crisp the bacon before crumbling it.
  • Use freshly chopped chives for the best garnish aroma and color contrast.
