Scale
Chicken and Potatoes
- 1 tbsp olive oil
- 3 Yukon gold potatoes chopped into 1-inch pieces
- 4 chicken cutlets
- 1 tbsp Italian seasoning, divided
- Salt & pepper to taste
- 4 oz fresh mozzarella
Bruschetta
- 5 plum tomatoes diced
- 4 cloves garlic minced
- 1/4 cup fresh basil finely chopped
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven and prepare potatoes: Preheat your oven to 425 degrees Fahrenheit. Toss the chopped potatoes with a little olive oil, then season generously with salt and pepper. Spread them out on a baking sheet and bake for 20 minutes to start roasting.
- Prepare and bake chicken: While the potatoes bake, lightly coat the chicken cutlets with olive oil. Rub the chicken with half of the Italian seasoning and season with salt and pepper. After the potatoes have baked 20 minutes, place the chicken on the same baking sheet and bake everything together for an additional 15 minutes.
- Make bruschetta topping: In a bowl, combine the diced plum tomatoes, minced garlic, chopped fresh basil, salt, and pepper. Slice the fresh mozzarella to prepare for topping the chicken.
- Add mozzarella to chicken: During the last 2 minutes of baking, place slices of fresh mozzarella on each chicken cutlet and return to the oven until the cheese is melted and bubbly.
- Serve and garnish: Remove the chicken and potatoes from the oven. Spoon the fresh bruschetta mixture on top of the chicken. Serve immediately and enjoy this flavorful meal.
