Description

This Shrimp and Rice Skillet is a flavorful and easy one-pan meal combining sautéed zucchini, garlic, Italian seasoning, and juicy shrimp cooked with tender white rice and cherry tomatoes. Perfect for a quick weeknight dinner with a fresh basil garnish.

Ingredients

Scale

Main Ingredients

  • 1 tbsp olive oil
  • 1 zucchini chopped
  • 2 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • pinch red pepper flakes
  • 2 tbsp tomato paste
  • 1 cup white rice
  • 3 cups chicken broth
  • 1 cup halved cherry tomatoes
  • 1 lb shrimp peeled and deveined
  • fresh basil for garnish

Instructions

  1. Heat olive oil: Heat olive oil in a large pan over medium heat. Add the chopped zucchini and sauté for 2-3 minutes, tossing occasionally to cook evenly.
  2. Add seasonings and tomato paste: Add minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and tomato paste. Stir well to combine and cook for 1-2 minutes until fragrant.
  3. Toast rice: Add the white rice to the pan and toast it by stirring constantly for one minute to enhance flavor.
  4. Cook rice with broth: Pour in the chicken broth and stir. Bring the mixture to a gentle boil, then cover the pan and reduce heat to simmer. Cook for 10-12 minutes, stirring every 1-2 minutes to prevent rice from sticking to the bottom.
  5. Add tomatoes and shrimp: Stir in the halved cherry tomatoes and shrimp. Continue cooking uncovered for 3-4 minutes until the shrimp turns opaque and the rice is tender.
  6. Garnish and serve: Remove from heat, garnish with fresh basil leaves, and serve warm.

Notes

  • For a spicier dish, increase the pinch of red pepper flakes or add fresh chili slices.
  • Use low-sodium chicken broth to reduce the salt content.
  • Substitute shrimp with scallops or chicken for variation.
  • Make sure to stir frequently while cooking rice to avoid burning on the skillet bottom.
  • Fresh basil can be replaced with fresh parsley or cilantro depending on preference.
