Description

A fresh and flavorful smoked salmon avocado toast recipe featuring creamy mashed avocado, tangy lemon, crisp vegetables, and savory smoked salmon on toasted bread, perfect for a quick and nutritious breakfast or light lunch.

Ingredients

Scale

Main Ingredients

  • 2 slices sourdough bread or bread of choice
  • 1 ripe avocado
  • 2 wedges lemon
  • 2 teaspoons chopped fresh chives
  • ½ teaspoon everything but the bagel seasoning

Vegetables & Toppings

  • 1 tomato, sliced
  • 8–10 slices cucumber
  • Red onion, finely sliced (about 2 tablespoons)
  • Salt, to taste
  • Black pepper, to taste
  • 3–4 ounces smoked salmon
  • 1 handful microgreens

Instructions

  1. Mash Avocado: In a bowl, mash the ripe avocado using a fork. Add a squeeze of lemon juice, chopped fresh chives, and everything but the bagel seasoning. Mix until well combined but still slightly chunky.
  2. Toast Bread: Toast the slices of bread to your preferred level of crispiness. This step is optional but recommended for added texture and flavor.
  3. Spread Avocado: Gently spread the mashed avocado mixture evenly onto each slice of toasted bread.
  4. Add Vegetables: Layer sliced tomatoes, cucumber slices, and finely sliced red onion on top of the avocado. Sprinkle with salt and black pepper to taste.
  5. Top with Salmon and Garnish: Arrange the smoked salmon slices over the vegetables. Add more everything but the bagel seasoning and chopped chives if desired. Finish by adding a handful of microgreens and squeezing a bit of lemon juice over the top.
  6. Serve and Enjoy: Serve immediately while the bread is still slightly warm and enjoy your fresh, flavorful smoked salmon avocado toast.

Notes

  • The nutritional values are approximate per serving and may vary depending on portion sizes and specific ingredient brands.
  • You can substitute sourdough bread with gluten-free bread for a gluten-free version.
  • For a spicier kick, add some red pepper flakes or a drizzle of hot sauce.
  • Fresh dill can be added along with chives for more herbaceous flavor.
  • Make sure avocado is ripe for easier mashing and better flavor.
