Ingredients
Scale
Meatloaf
- 2 pounds ground beef 85% or 90% lean
- 6 ounce box stove top stuffing mix any flavor
- 1 cup yellow onion finely diced
- 2 large eggs
- 3 teaspoons garlic minced
- 1/3 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 cup milk
- 1 teaspoon black pepper
Meatloaf Sauce
- 1/3 cup barbecue sauce
- 2 tablespoons brown sugar
Instructions
- Preheat Oven: Preheat your oven to 350℉ and line a baking sheet with parchment paper. Set this aside to prepare your meatloaf on.
- Mix Ingredients: In a large bowl, combine the ground beef, stuffing mix, finely diced yellow onion, eggs, minced garlic, ⅓ cup ketchup, Worcestershire sauce, milk, and black pepper. Mix until just combined, being careful not to overwork the mixture. Let it rest for 5 minutes to allow the stuffing to absorb moisture.
- Shape and Bake: Shape the meat mixture into a loaf and place it in the center of the prepared baking sheet. Bake in the preheated oven for 45 minutes.
- Prepare Sauce: While the meatloaf is baking, whisk together the remaining ketchup, barbecue sauce, and brown sugar in a small bowl until well combined.
- Glaze and Finish Baking: Remove the meatloaf from the oven and evenly spread the prepared sauce over the top. Return the meatloaf to the oven and bake for an additional 20 minutes or until the internal temperature reaches 160˚F for safe consumption.
- Rest and Serve: Allow the meatloaf to rest for 10 minutes after baking. This helps redistribute the juices and makes slicing easier. Serve warm and enjoy.
Notes
- Let the beef mixture rest after mixing so the stuffing absorbs the moisture and helps bind the loaf.
- Gently combine the ingredients to avoid creating a dense or tough meatloaf.
- Shaping the loaf directly on the baking sheet ensures even cooking and browning on all sides.
- Spread the glaze evenly over the top for a glossy finish and enhanced flavor.
- Ensure the meatloaf reaches an internal temperature of 160°F to guarantee it is cooked safely.
