Description

Turmeric Cauliflower and Chickpea is a vibrant and healthy sheet pan dinner featuring roasted cauliflower, potatoes, chickpeas, and olives tossed in a fragrant turmeric lemon marinade. Served with quinoa and a dollop of Greek yogurt, it offers a perfect balance of earthy spices, bright citrus, and creamy texture for a wholesome Mediterranean-inspired meal.

Ingredients

Scale

Vegetables and Legumes

  • 1 medium cauliflower (about 1½ pound or 680 g), cut into florets
  • 1 pound potatoes, cut into thin wedges
  • 1 can chickpeas (15 oz / 400 g), drained and rinsed
  • ½ cup pitted olives

Marinade

  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • 3 tablespoons lemon juice
  • 3 cloves garlic, grated or minced
  • 1½ teaspoons turmeric
  • 1 teaspoon dried rosemary
  • ¾ teaspoon salt
  • Black pepper, to taste

To Serve

  • 1 cup cooked quinoa (or farro, brown rice, couscous, orzo, bulgur, wild rice)
  • ½ cup Greek yogurt
  • ¼ cup fresh parsley, chopped

Instructions

  1. Make the marinade: Preheat the oven to 430°F (220°C). In a small bowl, whisk together olive oil, lemon zest, lemon juice, grated garlic, turmeric, dried rosemary, salt, and black pepper until well combined.
  2. Prep the veggies: Cut cauliflower into florets, slice potatoes into thin, even wedges, and drain and rinse the chickpeas thoroughly. Place all the veggies and olives in a large baking sheet. Pour the marinade over and toss everything until evenly coated with the turmeric mixture.
  3. Roast: Spread the vegetables out in a single layer on the baking sheet. Roast in the preheated oven for 30 minutes or until the vegetables are tender and golden around the edges, stirring once halfway through if desired.
  4. Finish and serve: After roasting, sprinkle chopped fresh parsley and add a squeeze of lemon over the veggies. Toss gently with cooked quinoa or your chosen grain on the baking sheet. Serve in bowls topped with a spoonful of Greek yogurt for a creamy contrast.

Notes

  • Substitute cauliflower with broccoli, Romanesco, or a mix for variety.
  • Use sweet potatoes or butternut squash in place of white potatoes.
  • Replace chickpeas with white beans or lentils if preferred.
  • Olives can be swapped with capers, sun-dried tomatoes, or chopped artichoke hearts.
  • Use half olive oil and half vegetable broth for a lighter marinade.
  • Lemon juice and zest can be substituted with red wine vinegar or apple cider vinegar.
  • Garlic powder or roasted garlic can replace fresh garlic.
  • Turmeric can be substituted with curry powder or a pinch of saffron.
  • Rosemary alternatives include thyme, oregano, or Italian herb mix.
  • For serving, quinoa can be replaced with rotisserie chicken, farro, couscous, brown rice, or barley.
  • Use low-fat Greek yogurt, Skyr, or dairy-free yogurt instead of regular Greek yogurt.
  • Fresh herbs like cilantro, basil, or mint can replace parsley and lemon for garnish.
  • Cut veggies evenly to ensure uniform roasting.
  • Pat chickpeas dry thoroughly to get crisp edges.
  • A large baking sheet helps avoid overcrowding and promotes caramelization.
  • Toss the veggies well in the marinade to coat every piece evenly.
  • Adjust lemon at the end for brightness to balance the warm spices.
  • Add fresh herbs after baking to keep flavors vibrant.
  • Serve with contrasting textures such as quinoa or farro for a balanced bowl.
  • Finish with yogurt or feta cheese for a creamy cooling contrast.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
