Ingredients
Scale
Salad
- 4 cups rotisserie chicken shredded
- 8 strips bacon chopped (center cut)
- 1/3 cup green onions diced
- 2/3 pint grape tomatoes halved or quartered
- 1 avocado diced
Dressing
- 1/2 cup plain Greek yogurt (optional, can be replaced with all mayonnaise)
- 1/3 cup mayonnaise
- 1 tablespoon ranch seasoning
- 1/2 tsp freshly cracked pepper
Instructions
- Make the dressing. In a large mixing bowl, combine the mayonnaise and Greek yogurt. Whisk in the ranch seasoning and freshly cracked pepper until smooth and well blended.
- Mix the chicken and bacon. Add the shredded rotisserie chicken, chopped crispy bacon, and diced green onions into the bowl with the dressing. Mix thoroughly to ensure everything is evenly coated.
- Add tomatoes. Gently fold in the halved or quartered grape tomatoes until well integrated throughout the salad.
- Adjust seasoning. Taste the chicken salad and adjust the seasoning if necessary to suit your preference, adding more pepper or ranch seasoning if desired.
- Refrigerate. Transfer the chicken salad to an airtight container and place it in the fridge for at least 1 hour to allow flavors to meld and chill.
- Add avocado before serving. When ready to serve, gently fold in the diced avocado, or alternatively, you can arrange the avocado pieces on top of individual portions without mixing to preserve texture.
Notes
- Serve the chicken salad with club crackers, Ritz crackers, tortilla chips, or cucumber rounds for a delightful snack.
- Alternatively, use the chicken salad as a filling for lettuce wraps or romaine boats for a light meal option.
- Store leftovers in glass airtight containers in the fridge for meal prep convenience.
- Pre-portion crackers or veggies into snack-sized bags alongside the chicken salad for easy lunches or picnics.
- Use disposable 5.5 oz condiment cups to pack individual servings perfect for kids’ lunches or on-the-go meals.
