Ingredients
Scale
Pasta
- 12 oz. lasagna noodles
Cheese and Filling
- 15 oz. whole milk ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 tsp salt
- 1/4 tsp freshly cracked black pepper
- 10 oz. frozen spinach (thawed)
Sauce
- 1 24 oz. jar pasta sauce
Instructions
- Preheat Oven and Cook Noodles: Preheat your oven to 400ºF. Bring a large pot of water to a boil over high heat. Add 1 tsp salt to season the water, then add the lasagna noodles. Boil until al dente, about 9-11 minutes, ensuring they are firm enough to roll without tearing. Drain noodles in a colander and set aside to cool enough to handle.
- Prepare Filling: While noodles are boiling, drain excess water from the thawed spinach by squeezing it well. In a large bowl, combine the spinach, ricotta cheese, 1 cup shredded mozzarella, grated Parmesan, egg, 1/4 tsp salt, and 1/4 tsp freshly cracked black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Assemble Roll Ups: Lay out the cooled lasagna noodles flat on a clean surface. Spread about 1/4 cup of the spinach and cheese filling evenly over each noodle, covering edge to edge but not too thick. Carefully roll each noodle into a tight roll and place seam-side down into a large casserole dish. Continue with remaining noodles and filling, aiming for approximately 16 roll ups. Set aside any extra noodles for backup in case of tearing.
- Add Sauce and Cheese: Pour the entire 24 oz. jar of pasta sauce evenly over the arranged roll ups in the casserole dish. Sprinkle the remaining 1 cup of shredded mozzarella over the top to add a cheesy finish.
- Bake: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 30 minutes until the cheese is melted and the roll ups are heated through.
- Serve: Remove from the oven, let cool slightly, then serve hot. Enjoy your delicious lasagna roll ups!
Notes
- Be sure not to overcook the noodles to prevent them from breaking when rolling.
- Thoroughly drain the spinach to avoid watery filling and soggy roll ups.
- You can substitute fresh spinach for frozen if preferred, just sauté and soften it before using.
- Use a baking dish large enough to fit roll ups in a single layer without crowding.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
- For a vegetarian option, this recipe is already suitable as it contains no meat.
